Apple Peanut Butter Cookies (gluten free)

Preheat oven to 375° F. Cream shortening, peanut butter, applesauce, granulated and brown sugars together until light and fluffy. Measure and sift dry ingredients together and stir into creamed mixture. Mix thoroughly. Form into small balls about the size of walnuts and place on lightly greased cookie sheet. Flatten cookie with a fork. Bake for 10-12 minutes, or until lightly browned. Allow to cool before removing from the cookie sheet.
